It's the 140th of April, and it seems the only thing on our schedule these days is a abundance of Virtual Happy Hours. Connecting with friends, colleagues and family is fun and meaningful, and surely makes the days go faster. 

DIY Coffee Liqueur

You can be the star of your next VHH with this (kinda) quick and easy Coffee Liqueur recipe. 

Ingredients:

8 ounces of coffee, ground
750 ml spirits (we used vodka, but you could try rum or whiskey)
1.75C sugar (we used brown sugar)

One of the things we are learning during this time is to use what we have on hand, and that doesn't require a trip to the grocery store. So don't get too caught up in the details. We made a half-batch of the recipe, as that's how much vodka we had.

Process:

1. Mix spirits and coffee, and let sit for two days. Shake or stir periodically.
2. Strain and discard grounds. We strained once through a metal strainer. If needed, strain again through a filter.
3. Transfer liquid to saucepan over medium heat. Add sugar, and stir until dissolved.
4. Cool completely, then transfer to bottle with lid.

We enjoyed this coffee liqueur straight, and over ice. You can also use it as a base for any of these cocktails.
